Processing

This is a washed coffee, selected for its clarity, balance, and clean cup profile.

The process begins with the selective harvesting of ripe cherries. After harvest, the cherries rest for approximately 24 hours before depulping. The coffee is then transferred to water tanks, where it ferments for around 12 hours. After fermentation, the coffee is washed and then dried, either in the sun or through mechanical drying, depending on infrastructure and availability.

This process contributes to the profile that defines the coffee in the cup: clean sweetness, good body, elegant structure, and a refined finish.

This coffee comes from Huila, one of Colombia’s most respected coffee-growing regions. Located in the southwest of the country, Huila has a long and deeply rooted coffee tradition and is widely recognised for producing high-quality specialty coffee.

Coffee is grown across most of the department’s municipalities, and the region is one of Colombia’s most important coffee-producing areas. The combination of altitude, climate, and local expertise creates the ideal conditions for coffees with sweetness, complexity, and clean structure.

This lot is produced by small coffee growers and sourced through Cadefihuila, the Cooperative of Coffee Growers of Huila. The cooperative brings together more than 3,500 small producers across 28 municipalities. Many of these farms are family-run and typically between two and three hectares, allowing close care and attention throughout cultivation, harvest, and post-harvest handling.

Cadefihuila supports producers through a strong regional infrastructure that includes buying points, agricultural input stores, and cupping laboratories, helping preserve quality and improve consistency throughout the supply chain.
